Hillbilly celebrates the Blue Mountains and all that is good about getting out of the city and into our world heritage surrounds. 100% natural and the only cider to use the Julie apple invented in Bilpin. Hillbilly was the highest scoring Aussie cider in the UK International cider challenge in July 2015.
The modern Hillbilly is a true bohemian, not constricted by the mainstream and preferring to live by the rules of the land. Our hillbillification began when we moved to Bilpin in the Blue Mountains. A simpler life called for a simpler drink. 100% whole crushed mountain apples, fermented cold to elevate delicate apple notes and refreshing flavours. Natural CO2 produced during fermentation makes for an easy, bohemian bubble. It’s unpasteurised, gluten free and made with no added sugar or concentrates.
