Sous Chef in the Grand Dining Room

We are looking for an experienced and passionate Sous Chef to support our Executive Chef in the Grand Dining Room and associated function venues. The Grand Dining Room provides breakfast service for our in-house guests, casual lunch dining and a’ la carte evening dining 4-5 nights a week as well as function work dependent on bookings.

The successful applicant will be confident in their skills, have attention to detail, strong communication skills, demonstrated experience and the ability to work under pressure.

Requirements:

  • Certificate III in Commercial Cookery or equivalent
  • Minimum 3 years’ experience as a qualified chef
  • Demonstrated experience in a similar environment and role preferred
  • Able to manage, lead and maintain standards in the kitchen in the Head Chefs' absence
  • Able to deliver consistent, high quality catering while maintaining food costings
  • Keen eye for presentation and attention to detail
  • Ability to multi-task and work effectively under pressure
  • Safe food handling knowledge
  • Able to work a 7 day roster including early mornings, nights and weekends
