Slow Wine Co is dedicated to producing wines from its Bantry Grove vineyard that fully express the flavours and palate that each variety can develop when grown in our very old soils.
At 940 to 980 mtrs elevation its climate is distinctly cool which allows us to slowly mature grapes from the varieties found commonly in north eastern France, such as Chardonnay, Pinot Noir and the aromatic whites found in Alsace.
Our wine maker, Will Rikard-Bell, continues this un-hurried progress, using artisan techniques perfected in olden Europe to produce wines that are rich in aroma, flavor and texture. This involves lots of small batches, use of natural yeasts and enzymes, and careful choice of new and old French oak barrels for fermentation of white wines and maturation of both red and whites.
It normally takes two years from budburst to bottle, but patience is a virtue, as is slow appreciation when finally resting in your glass.
